Chickpea Potato Coconut Curry in Crockpot

Are you in a rush and do not have time to make dinner, or do not want to sit around in the evening cooking? Well here is an easy recipe that is fresh and easy to do, so no need for takeaway. It also will feed about 5 good servings. Either serving a family, small dinner party, or even wanting to saves for leftovers during the week so you do not have to bother this is an ideal meal for you. 20150525_110341

Serve along with rice, couscous, on top of noodles, or even on its own. Can change it up if you get bored of the same old same old. If you are not a vegetarian and decided you want to add chicken then just add the chicken in at the start with everything else.

Slow cookers economical to use and they’re great for a healthier way for a low-fat method of cooking and require the minimum amount of effort. Slow cookers are designed to do their own thing so you don’t need to keep opening lid making sure it is cooking because every time you take the lid off it will release some of the heat, so if you keep doing this you’ll have to increase the cooking time.

1 teaspoon olive oil
3 yellow onion, sliced
3 clove garlic, minced
1 teaspoon powder ginger
15-ounce can chickpeas (about 1 1/2 cups)
2 canned or boxed chopped tomatoes
2 cups cauliflower florets
4 potatoes, peeled and diced
1 can coconut milk
1 cup vegetable broth
1 tablespoon garam masala
1/2 tablespoon curry powder
1 teaspoon salt
2 cups lightly packed baby spinach, chopped



  • Heat the oil in a pan, and sauté the onions, garlic, and ginger for several minutes until tender and brown.
  • Transfer the onion mix to a slow cooker, and add remaining ingredients except for the spinach.
  • Heat on low for six hours (or on high for four hours).
  • Before serving, stir in the spinach, and heat for five more minutes.

Another Banana Bread

Hey Guys! Sorry for the little break in posting. It has been a long time since I last wrote a post, but i have been preoccupied with finishing my final year of university. When you get home, what’s the first thing you do? Mine is without a doubt going straight in the kitchen and see what craziness I can cook and bake while I am home.

Moist and delicious classic banana bread recipe is the way to start the baking off. Easy to make, no need for a mixer and the ingredients are so basic, I had everything I needed on hand. Great way to use up those brown mushy bananas.


  • IMG_20150524_1805193 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour
  • 1/2 cup chocolate chips (or as much as you desire)


  1. Pre heat oven to 350
  2. Mash up the bananas
  3. Add the melted butter
  4. Then mix in the sugar, egg, and vanilla
  5. Add the baking soda, chocolate chips and salt and mix
  6. Add the flour last, bake in a preheated oven for one hour and you’re done

Courgette Noodles or Zoodles

Believe in yourself! Have faith in your abilities! Without a humble but reasonable confidence in your own powers you cannot be successful or happy.

So if you do not know what zoodles are then it is zucchini (courgettes) sliced into thin strips using knife, can use zucchini spiralizer, or julienne peeler even.
Also known as ‘zoodles’, can replace spaghetti for a lower-carb and gluten-free meal. Serve with your favorite pasta sauce. They approximate the sense of pasta in that they’re roughly the same shape, they don’t have a lot of flavor on their own and they serve as a fantastic vehicle for “sauce” and other goodies. Once you’ve got your cooked zoodles, top them with any number of sauces. I was surprised at how the texture and appearance of the zucchini resembled actual pasta.
While at university sometimes I need a quick inexpensive meal and this is perfect it too has all the right nutrients I need to keep me feeling great.

I use Quorn range when I wanted to keep it vegetarian (add Quorn chicken piece or Quorn mince). However adding chicken or mince does give it some richness. Can experiment with your taste buds and try different spices. Can top it off with some Parmesan to make it really like spaghetti bolognese. The spectrum is huge for variety.

Viennese Biscuits

Our greatest weakness lies in giving up. The most certain way to succeed is always to try just one more time.

They are easy to make and are really ‘melt in the mouth’ tasty. These biscuits are easy to make and ideal for sharing. These biscuits are heaven on a plate! Easy to make but hard to stay away from! Are similar to an extremely short shortbread. The wonderfully fine-textured biscuit melts in the mouth while the smooth, velvety chocolate adds a silky richness to this classic biscuit.
24 biscuits
  • 200g butter
  • 55g caster sugar
  • 1 tsp vanilla extract
  • 200g self raising flour
  •  milk/plain/dark/white(depending on preference) chocolate -enough to dip each side of the biscuit


  • Preheat the oven to 180°C/ 360°F / Gas Mark 4.
  • Grease/ Line with baking paper a large baking trays
  • Place the butter, sugar and vanilla extract into a mixing bowl and mix with an electric mixer until soft and creamy (few minutes)
  • Gradually incorporate the flour and mix until a fairly stiff dough is formed
  • Place the mixture in a piping bag fitted with a large star nozzle and pipe approx 24 fingers  each 6cm (2 1/2 inches long) directly onto the baking sheets (leave space for them to expand)
  • Bake in the oven for 10 – 15 minutes until light brown (DONT over bake, burn easily)
  • Leave to cool and let set (if move to earlier will break) then gently lift them off the baking sheet onto a wire tray to cool completely.
  • Break the chocolate into a microwaveable bowl and microwave on full power for 1 minute or until melted
  • Dip the ends of the biscuit in the chocolate and transfer onto baking paper to set.

Butter Cake with Fudge Brownie base

We all have hope and dreams in life. I dream big because why put a limit on a dream. I know with hard work and determination I will get what I want. I can’t wait to be in the kitchen all the time. I find so much peace in creating food and feeding others brings so much joy to me


  • 140g  Chocolate (broken into pieces)
  • 50g Butter
  • 50g Brown sugar
  • 1 Egg
  • 35g All purpose flour

Butter cake:

  • 120g Butter
  • 100g Sugar 
  • 2 Eggs
  • 120g  All purpose flour
  • ¼ tsp Baking powder
  • 50ml semi-skimmed milk


Line a  loaf pan with baking paper.

Preheat oven to 180C/350F.

To make brownie:

Melt chocolate and butter over low heat.

Remove and leave to cool slightly. Stir in brown sugar until blended.

Add in egg, mix well.

Fold in flour, mix until well combined.

Pour batter into prepared pan. Bake in preheated oven for 15 minutes.

Whilst this is cooking start to make the butter cake:

Beat butter and sugar until creamy.

Add in eggs, one at a time, beating well after each addition.

Fold in sifted flour and baking powder, alternately add in fresh milk, mix to form batter.

After 15 minutes that the brownies have been cooking quickly remove it out of the oven and spread the butter cake batter over brownie, bake in oven at 160C/320F for 40 minutes or until cooked 


Homemade Peanut Butter Banana Chocolate Chip Clif Bars

So today I had bananas that were in a desperate need to be used plus I think my family were getting tired of banana bread… consequently I decided to play around with bananas. I wanted to do some sort of cookie, that didn’t make such a mess.

If you want to change something or do something one must start with themselves. Hence why I follow my passion for baking every day, even when I have had a long tiring day I will still get my hands in the kitchen. 


I really just played around with ingredients, do not know the exact measurements, I eyeballed it. I was just looking for it to come together like a cookie would. Plus just add what you would like in your bar, satisfy your taste.


  • 2 bananas
  • 1/2 cup peanut butter
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1 egg 
  • 1 teaspoon vanilla extract
  • 2 cups oats
  • 1 cup whole wheat flour 
  • 1 teaspoon baking powder
  •  Chocolate Chips


  1. Pre-Heat the over to 350ºF 
  2. Beat the first 6 ingredient together until well incorporated 
  3. Slowly combine in the dry ingredients into the wet mixture 
  4. I used an ice cream scooper and placed them one a baking tray
  5. Bake for 10-12 minutes until firm 



  • They will not expand so don’t worry if they are close together
  • Measurements aren’t exact, I just added things as I go, look for the dough to come together
