Country Vegetable Soup

Country Vegetable Soup

This is a very easy soup to make and is a great starter in the winter. Once you get the broth ready by sautéing the onions and garlic just throw in pretty much any vegetables you have. It is not very difficult and a great way to use up left over vegetables and it too is a very healthy clean dish.


2/3 cup sliced carrot
1/2 cup diced onion
2 cloves garlic, minced
3 cups fat-free broth (beef, chicken or vegetable)
1 1/2 cups diced green cabbage
1/2 cup green beans
1 tablespoon tomato paste
1 large tomato, diced
2 stalks celery, diced
1/2 teaspoon dried basil
1/3 teaspoon dried oregano
1/4 teaspoon salt
1/2 cup diced zucchini
In large saucepan that has be sprayed with pam, saute the carrot, onion, garlic and celery about 5 minutes.
Add broth.
Add cabbage, beans tomato paste, tomato, basil, oregano and salt.
Bring to a boil.
Lower heat and simmer 20 minutes, or until beans are tender.
Stir in zucchini and heat for 5 minutes more.
Serve hot.
