Low-Fat Raw Carrot Cake

Craving something sweet, but do not want to ruin your day with a slice of rich carrot cake try this raw carrot cake bites. This healthy bite will satisfy the sweet tooth, but you must be a carrot fan as it contains mainly carrots.

Ingredients (makes about 20 carrot cake balls):

180g medjool dates
260g or 2 cups grated carrot
25 to 30g or ¼ cup walnuts
1 small chunk ginger (about 7g)
1 tsp cinnamon
½ tsp nutmeg
¼ tsp vanilla powder
agave nectar (to taste if want a sweeter bite)
shredded coconut

Grate the carrots and chop the ginger.
Combine with the remaining ingredients (except the coconut) in a food processor and blend to form a chunky mixture.
Shape into fluffy balls and roll each in the shredded coconut.
Set in the freezer for an hour to firm them up… and you’re ready to serve .
