Roasted potatoes, parsnips, and sweet potatoes

This is such a simple dish to pair with your sunday roast. Any root vegetables you can use. Today I used potatoes, parsnips, and sweet potatoes. I chopped them into similar sizes and then coated them with olive oil. I usually just keep it simple and just add salt, but you can add seasoning as you desire. And you do not have to make it savoury you can substitute the olive oil for honey or agave nectar. Then place in pre-heated oven of 180 and let bake slowly for about 1hr30. Then ready to serve and enjoy with your guest
