Carrot and Turmeric Soup

Another Alkaline recipe
All ingredients I used are Highly Alkalizing Foods. This soup makes you feel clean and refresh. It too doesn’t take very long, so don’t be lazy and by store bought when you are busy. Simply just take 20 minutes out of your schedule to make something without all those preservatives.

Ingredients:
1 Pak Choi finely sliced
1 stick celery finely chopped
1 tablespoon fresh grated ginger
1 teaspoon grated turmeric
pinch of cumin seed
600 g (21 oz) Carrot, thinly sliced
100 ml almond milk
1 litre Marigold Swiss Vegetable Bouillon
Pinch of sea salt

Serves 2 generous bowls.
Method
Combine stock, celery, carrot, almond milk, ginger, turmeric, cumin seeds and pak choi into a saucepan.
Bring to the boil and simmer for 15 minutes, or until everything is tender.
Remove the soup from the heat and cool slightly.
Blend in a high performance blender like a Vitamix for 15 – 20 seconds.
Then serve two portions

What’s good about it!
Carrots contain vitamin A precursors called carotenoids (Beta carotene) that help promote vision and support a healthy immune system. Carrots are rich in alkaline elements which purify and revitalize the blood. They balance the acid alkaline ratio in the body.Consuming Carrots regularly can improve the appearance of skin, hair, nails etc and also improve eyes health.
Ginger and turmeric are anti-inflammatory and immune boosting.Ginger improves the absorption and stimulation of essential nutrients in the body.
Health benefits of celery are – they are rich in vitamin C, they lower cholesterol, prevent cancer, reduce high blood pressure, and promote health.
